Yummy high fiber Mango cookies

These are terrific! Any time I want a sweet snack or crave a little carb/grains I take one of these out of the freezer. I tried a batch with pumpkin puree, but they weren’t that great, so I made these. I also tried a bag of frozen mango/banana/strawberry/papaya and those are awesome! Experiment for yourself, you’ll be pleased. Even our dogs love them.


24 oz. frozen mango, defrosted and pureed – you can also use fresh mango. Frozen is just what I had on hand.

3 1/2 C oats (as in the regular oatmeal cereal)

1/4 -1/2 C natural raw coconut – don’t use the sweetened kind, too much unneeded sugar.

1 C dried blueberries and/or cranberries

3 Tbsp flax seed meal

1 tsp vanilla

1 tsp baking powder

pinch of salt

zero calorie sugar substitute – we like our Stevia (to taste)

2 eggs

Preheat oven to 350 degrees. Spray cookie sheet with nonstick spray.

In a large bowl mix all ingredients except eggs until you have the mixture to your desired sweetness, then add eggs and mix well.

Spoon about a tablespoon of batter for each cookie onto sprayed cookie sheet and smoosh down slightly. Bake for 15 minutes. Let cool before serving.

Makes about 30-40 cookies
