Oat Bran Galettes or Pancakes

These are great as snacks – they keep in the fridge a month. Taste just like pancakes, but wow!


8 egg whites – we use the cartons of those.

16 Tbsp. oat bran

16 Tbsp. fat-free plain Greek yogurt – FAGE is our fave.

zero calorie sugar substitute (to taste) – We use our favorite Stevia.


In a small bowl, beat the egg whites until foamy. In a separate bowl, combine yogurt, oat bran and sweetener. Add the beaten egg whites and stir until blended.

Heat a nonstick griddle or pan to medium heat. Using 1/4 cup measuring cup pour pancake mixture on griddle/pan and cook for about 5 minutes or until the bottom side is golden and upper side starts to dry. Flip and continue cooking the other side for an additional 5 minutes.


Allow to cool before serving.

You can have some fun and experiment. Like substitute canned pumpkin for the yogurt and add cinnamon or instead of sugar substitute you can use different herbs and spices such as pepper, chopped garlic or whatever sounds good to you. These have a lot of possibility.
